Meet the Team
Owner and creator of Little Loaf, at this point, she does a little bit of everything! She started as the sole baker and operator of the business back in 2020 and now is surrounded by a team of wonderful support and has taken on way more than just baking! To learn more about her story, check out our About Me section.
Julia’s sister, second-hand person, and first official employee at Little Loaf! She initially got brought onto the team as a dishwasher, to simply help her sister in the leading months of opening to the public in 2022. This life-saving support, meant to simply help make ends meet at the beginning stages, turned into an unexpected opportunity for Charlotte. She began (with no experience) learning about the dough and how to make bread along-side Julia and is now co-managing the complete dough mixing schedule on a daily basis! She is in the back every day keeping the team on track and is our trusted dough production lead, among other important roles! Julia would not have been able to open without her!
Julia met David a few months before opening. He used to stop by while Little Loaf was still a semi-construction site and drop off yummy pastries! He came in with a resume in hand and was very professional, but what really hit home for Julia was how he presented her with home-made treats (including David’s Bombe as seen on the menu today). In addition, he continuously checked on the progress of the opening. David has years of experience in the hospitality industry, but approached Julia with humility and care for her personal goals. Now, he is the lead on our pastry production, he is a dough mixer/shaper and our overall handyman at the bakery! He’s been there since our opening and is now like family!
Dylan was seeking a potential baking position in Wilmington in the year of 2022. After learning about us through a friend, Dylan reached out to us because he felt that his style and love for baking aligned with the company. He is a baker originally from New York and was considering moving to Wilmington in 2023. Once in direct contact with Julia, they realized that their passions and their pasts were extremely similar. In February of 2023, he came to Wilmington to try us out! Immediately, he and the team clicked! After working for 2 weeks at the bakery, we all realized (and hoped) that he would most likely take the leap and move down to Wilmington to join our family. He fell into our lives almost perfectly and is now a part of the entire production work-load! He is at the shop full time, bouncing from mixing dough, making pastries, baking bread and more. Thanks to him (and his experience) we were able to expand our hours and our menu to now include some of our fan favorites, as well as make more of everything for you!
Edgar reached out to Julia TWO YEARS before she opened her doors. They met and spoke about his hopes and dreams. Julia told him to come by and observe some of her process when she was baking out of a bakery in Hampstead. Since then, they stayed in touch and Edgar, the most patient employee ever, waited until December of 2022 to receive the “okay” to officially join the team. Julia tasked Edgar to take on the most difficult shift for Julia to let go of… the early morning/opening baking shift. This being Julia’s most difficult (but necessary) part of her job to share speaks volumes of the trust we put in him every day. You may see him in the back of Little Loaf if you come early enough, or you may never see him as he is the earliest on the clock. Edgar starts off the morning bake for the week, every day but Sunday. Without him, you wouldn’t get your bread on-time for the 8 AM opening!
With a similar timeline as David, Blythe’s father met Julia at a farmer’s market. He and Blythe came by the shop when it was still under construction to set up an un-official interview. They waited patiently to hear word from Julia about the opening and when they finally did, Blythe joined the team! This being Blythe’s first job, she started as support staff, scaling (measuring) ingredients in advance for the bakers. She then took on portioning the pastries and learning how to make cookie dough! Her position evolved during the summer (when she was on summer-break from high school) and she learned how to work at the front of the bakery! Now, you will see her sometimes at the front helping our wonderful customers or in the back helping our wonderful team! She is all around support and her level of work ethic would never reveal that this is her first job ever, as she excels at everything she does for us!
Annie Kate reached out to Julia, solely based on shared passion and bread/food nerdiness! They loved all of the same flavor profiles and food and still, to this day, bounce back and forth ideas and fun recipes. Her main career and job is book-keeping (she has her own business), but purely out of interest, she comes to Little Loaf once a week to help with production! Her position is unique as it is simply to continue to do something that she loves while running her own business and being a new mom. You may not see Annie Kate working at the shop, but if you are lucky, you may meet her at a farmer’s market as she also helps us run the booth at Tidal Creek from time to time! If you meet her, talk about food, you won’t regret it!
Tony works one of the most under-appreciated positions at most food establishments. At Little Loaf, it is the most appreciated! Tony came onto the team a few months after we opened to help us out with washing dishes. Tony is a super talented artist who, by night, comes to the bakery when we are done for the day and does the most helpful job of the day. He is committed to the team and his job and because of him, we are able to start the day with a clean kitchen. Everyone that works in the back of house started as a dishwasher and has always done their own dishes. After a 10-12 hour shift, having someone else finish the cleaning is life-saving! You may not physically see Tony at the bakery, but just know that he is there five days a week providing a priceless service to us!
Evan came on to the team the week that we opened! He met Julia through his partner and previous job and they hit it off from the start. Because of Evan’s outstanding customer service and positive energy, he saved Julia during those opening months when we were just trying to get by. Emotional support to all who work here and handling sometimes stressful situations with calmness, humor and grace, we owe him hugs for life! All of our regulars know him… it’s impossible not to! He understands and loves the product, he cares about the customers and their experience and he knows how to make anyone feel welcome when they walk into Little Loaf. If you visit Little Loaf, then you are probably his friend; if you haven’t yet, then you will be!
Alex came onto the team through two separate recommendations given to Julia. When she joined the team, initially as a barista, the coffee program was simply based off of Julia wanting the best quality coffee with all in-house made syrups. With that said, there wasn’t much of a program at the start! Soon after Alex joined and Julia became aware of her unmatched drive and dedication to running a smooth and successful coffee program, she shortly became the lead of the coffee program and completely streamlined our process at Little Loaf. Because of her, we have a larger menu with more creative options at the best quality possible. Now that she has been with us longer, she has taken on more responsibilities and helps Julia with more than making the coffee program thrive. She runs our social media, does maintenance on our website, organizes all daily orders, helps Julia with errands and bank runs and has taken on a role adjacent to management for the front of house team! She is there almost every day that we are open either helping with coffee, helping a customer, making syrups or doing any and all small tasks that help Julia and the team! If you are a regular, you definitely know her and she probably makes you your favorite cup of coffee!
Bree started with us in 2023 as farmer’s market support. She was a Little Loaf customer and came onto the team with excitement and enthusiasm! To this day, she radiates positivity and is a constant help to everyone, no matter what the task. With that said… she has now grown from running the downtown farmer’s market booth to helping the Little Loaf team in-house with support in the back and front of house! Bree is either in the back prepping, in the front packing orders and making coffee or outside at a farmer’s market serving the public! She is an all-around super support and everyone at Little Loaf can count on her!
When Bee joined the team, originally she was helping pick up shifts during our initial growth over the summer of 2023. Prior to the summer, being that she was friends with Julia, she would jump in with little to no notice to help Little Loaf when we were down a barista or needed extra help. Now she is on our schedule regularly every Saturday! Bee is a barber, a bartender and a barista who is a part of the Wilmington community in a variety of ways. She’ll either be packing up your order, checking you out at the register or making you a beautiful coffee when you visit Saturdays. At Little Loaf she is family and will be around until she becomes a famous barber one day!
Britt, a long time friend of Julia’s, joined the team officially in 2023, but unofficially has helped Julia since the opening (and truly as support since the very beginning)! Like many first-time business operators, Julia was ill-prepared for the amount of work that was involved on the “back-end” of things. Naturally, working full time physically baking and managing at the store front, Julia had little to no time to spend on the computer or on the phone to stay in contact with the public. Not only did Britt take this on for Julia, she now dabbles in a bit of everything behind the scenes! She is our main point of contact on the website, she handles the classes and events, she answers phone calls, she uses her HR background to manage employee communication, she runs Little Loaf’s payroll, she helps Julia streamline pre-orders for the holidays, she sets up photoshoots… the list goes on! If you have emailed us, you may have spoken directly to her (our business coordinator)! Without her, Little Loaf (and Julia) would be a mess!
